Iraqi date cake recipe

How to prepare Iraqi date cake |
Ingredients:
- Three cups of flour.
- One cup of warm water.
- One cup of oil or butter.
- One tablespoon of instant yeast (preferably granulated).
- One tablespoon of sugar.
- One teaspoon ground cardamom.
- One teaspoon ground cinnamon (Darcin).
- Half a kilo of crushed dates.
- A small pinch of salt.
- One large egg.
- Two tablespoons of dried milk.
- A teaspoon of baking powder.
How to prepare :
- First we sift the flour, filter it and put it in a large bowl.
- Add the baking powder and the powdered milk and sprinkle the salt (a small pinch) over the flour and mix them together.
- Then we dissolve the instant yeast with a little warm water..and add sugar to it to help the yeast do its work faster..and leave it aside.
- Then we start adding the yeast after it has fermented and put it on top of the flour.. Then we start the kneading process quietly.
- Then we work on melting the amount of oil or butter on the fire.. and put it on top of the dough.. and continue kneading well.. then put the egg and knead the ingredients together.
- We continue kneading until we have a cohesive dough.
- We leave the dough in a warm place to ferment for about half an hour or a little more, depending on where the dough will be placed.
- We knead the ground dates with the addition of a little oil or butter.. so that the date dough becomes soft.. then we add the cardamom and cinnamon and knead all the ingredients well until we give the dates a wonderful taste.
- After the dough has fermented, we cut it into small balls according to the size of the klejeh mold.
- We put the stuffed dough inside the cake mould.. and press it slightly so that it takes the shape of the mould.
- We take the dough out of the mold by turning the cake mold, so the dough comes out from inside it.
- We repeat the same steps that we explained earlier until we finish all the dough.
- Then we put the klejeh in the tray to be baked in.. and leave it for five minutes to rest a little.. then we put it in the oven that we must preheat it in advance.. and it bakes for about a quarter of an hour.. then we brown its face to become golden.
- We take the cake out of the oven and leave it to cool before serving it.
- We can sprinkle the face of the cake with ground sugar or ground cinnamon as desired.
