The modus operandi of the Iraqi eggplant salad
Ingredients:
- Half a kilo of eggplant.
- A large onion cut into thin slices.
- The fruit of green pepper cut into slices.
- A large tomato cut into slices.
- Half a cup of ketchup. ,
- A tablespoon of pomegranate molasses.
- Two tablespoons of olive oil.
- A tablespoon of lemon juice .
- Half a teaspoon of salt.
- Cut the eggplant into thin rings, then cut the rings into slices.
- Heat half the amount of oil in a frying pan over medium heat.. then add the onions and green peppers.. and sauté them for three minutes.. then put them in a plate aside.
- Fry the eggplant in the oil until it becomes golden in color, then place it on kitchen paper to get rid of the excess oil.
- Put the pomegranate molasses, salt, lemon juice, and the rest of the oil in a small bowl.. and stir them well until the ingredients are mixed together.
- Put the eggplant, onions, and green peppers in a large bowl.. Then add the tomatoes, ketchup, and pomegranate molasses mixture, and stir well until the ingredients are mixed.
- Put the eggplant in the fridge until serving time or a thousand wellness.
