How to prepare :

  • Put an amount of oil about 5 cm high in a deep frying pan on gas over medium heat until the oil heats up well. Fry the eggplant slices until they change color to golden, then transfer them to kitchen paper; To get rid of excess oil.
  • Prepare the sauce by placing the tomatoes, salt, pepper, spices, molasses, mint, tomato paste, garlic and water in a saucepan over medium heat, and stir the ingredients with a wooden spoon for five to seven minutes until the sauce is formed.
  • Preheat the oven to 180 degrees Celsius, set a rack in the middle of the oven, and prepare a medium-sized dish.
