"dolma" is the queen of the Iraqi table, as it sits on the throne of the dining table, and tops the list of occasions and guests in every home. There is no competition for it among the other dishes that most Arab restaurants abroad are keen to serve as a dish rich in fats, vegetables and spices..and we will discuss one of its recipes.

How to make stuffed with meat (dolma)

Required ingredients and amounts:

  • ½ kilo of lamb, cut into cubes
  • ½ kilo of chard
  • ½ kilo of pitted zucchini
  • ½ kilo of pitted eggplant
  • ½ kilo of green peppers
  • ½ kilo of boiled onions
  • A cup of tomato sauce
  • A kilo of rice (e.g. amber) or (basmati rice)
  • ½ kilo of minced meat
  • A large bean cup soaked
  • ½ cup of oil.
  • onion

  • A small package of chopped celery
  • parsley
  • 2 tablespoons of pomegranate molasses
  • A teaspoon of curry
  • ½ teaspoon turmeric
  • ½ teaspoon lemon salt
  • Salt and black pepper

Spice mix ingredients:

  • Teaspoon salt
  • Half a teaspoon of black pepper
  • Half a teaspoon of meat seasoning
  • A dash of chili
  • A pinch of ground cumin
  • A pinch of crushed cardamom
  • A pinch of ground cloves
  • A pinch of ground cinnamon
  • A pinch of nutmeg
  • 2 teaspoons of sugar

How to prepare :

  • We wash the chard and cut it into pieces suitable for stuffing, then put an amount of water and leave it until it starts to boil.
  • Add the chard in the water and leave it for 4 minutes, then take it out and put it on a plate.
  • On a medium heat, heat half the amount of oil, then add the meat, salt and black pepper, and stir-fry until it turns brown.
  • Next, add the rice, minced meat, celery, onion, leeks, parsley, tomato sauce, pomegranate molasses, curry, turmeric, lemon salt, salt, black pepper and remaining oil and stir all together.
  • We spread the chard and put the filling in it, then we apply the sides to each other and wrap it like grape leaves.
  • We stuff zucchini (trees), eggplant, green peppers and onions as well with the rice mixture.
  • In a large bowl, put the chard sticks on the bottom, then the meat, then the stuffed chard.
  • Pour boiling salted water to cover the vegetables and leave it on the fire until it is tender.
